Ingredients for the dough:
100 g plain flour
120 g grated Edam cheese
50 g grated Grana padano cheese
80 g butter, room temperature
salt
ground red pepper
1 egg yolk
1 tablespoon milk
mix of finely chopped herbs
egg white for brushing the dough
grated Edam cheese for sprinkling
Method:
In a bowl, combine all the ingredients for the dough and knead into a stiff, compact dough. Wrap in plastic wrap and refrigerate for at least 30 minutes. This time will help the dough release the gluten, making it easier to roll out.
Preheat the oven to 200 °C.
On a floured kitchen board, roll out the dough to a thickness of about 6-7 mm and cut out shapes about 4 cm in diameter. Place on a baking tray lined with baking paper. Brush with egg white and sprinkle with grated cheese. Bake until golden, about 12-13 minutes.
